Champagne Vinegar – This is more than just a gourmet ingredient; it might also help in reducing body weight, waist size, and belly fat
Dijon Mustard – A dollop of this condiment can add a dash of selenium—an antioxidant—and also provide anti-inflammatory benefits, courtesy of compounds like curcumin
Honey – A spoonful of honey is revered for its rich antioxidant content. It's known for suppressing coughs, promoting healing, and potentially even aiding against high blood pressure & cholesterol

Citrus Salad Recipe

Ingredients:
DRESSING
- 1/3 cup champagne vinegar
- 1 tsp dijon mustard
- 2 tsp honey
- 1 garlic clove, minced
- 2/3 cup extra-virgin olive oil
- kosher salt
- freshly ground black pepper
SALAD

4 oz arugula
- 3 to 4 oranges, thinly sliced (we like to use a combination of navel and cara cara)
- 1 red grapefruit, thinly sliced
- 4 fresh figs, sliced
- 1/2 fennel bulb, thinly sliced
- 1/3 cup microgreens
- 2 tbsp freshly chopped mint leaves
- 1/4 cup sliced almonds
Instructions:

In a small bowl, whisk together champagne vinegar, dijon mustard, honey, garlic, and extra-virgin olive oil until combined.

Season dressing with salt and pepper to taste. Refrigerate until ready to serve.

Arrange arugula on a serving platter or plate. Place the citrus slices on top as desired.

Top arugula with slices of figs and fennel. Sprinkle microgreens, mint leaves and almonds on top.

Drizzle salad with desired amount of dressing* and season with additional salt and pepper, to taste. Serve and enjoy.
*Notes:
Dressing can be made ahead of time and stored in an airtight container for up to 2 weeks.
Dressing makes 1 cup total. You can use as much as you like for this salad and save the rest!
