Sparkling Peach Thyme Mocktail Recipe

Ingredients:
Peach Thyme Simple Syrup
- 1/2 cup sugar
- 1/2 cup water
- 1 peach, sliced into 1/2-inch thick slices
- 3 sprigs fresh thyme
- 1/2 Tbsp freshly squeezed lemon juice
Mocktail
- Ice
- 3 to 4 peach slices
- Sparkling Water
- 0.5ml to 1ml Jihi Reverie
- Garnish: peach slices, thyme sprigs
Instructions:
- In a small saucepan, combine sugar, water, peach slices, and thyme sprigs over medium-high heat. Bring to a simmer until the sugar has dissolved.
- Add lemon juice and let the mixture simmer for 3 to 5 minutes.
- Remove from heat and cool to room temperature in the refrigerator or freezer.
- Strain out the solids. Discard the thyme sprigs but save the peaches to enjoy over yogurt or ice cream!
- To make the mocktail, add 1 ½ ounces peach thyme syrup to a glass filled halfway with ice. Add a few peach slices, top with ice and fill with sparkling water. Stir in Reverie.
- Garnish with more peach slices and thyme sprigs. Serve.
