Black Sticky Rice Pudding with Mango

Ingredients:

  • 1/2 cup black glutinous rice (also called black sweet rice)
  • 1 1/2 cups water
  • 3/4 tsp Himalayan pink salt
  • 2/3 cup coconut cream
  • 2 Tbsp maple syrup or honey
  • 1 ripe mango, chopped
  • Mint sprig, for garnish

Stovetop Instructions

  1. Rinse the rice under cold water. Drain out any excess water.
  2. Add rice, 1/4 tsp Himalayan pink salt, and water to a saucepan. Bring to a boil over high heat.
  3. Lower heat and simmer for 20 minutes until the rice is tender and the sauce has thickened into a rich sauce.
  4. Remove from heat and cover for 10 minutes. Stir in syrup or honey until combined.
  5. While the rice is resting, add cream and remaining salt to a different saucepan. Simmer together for about 3 to 5 minutes, until thickened slightly.
  6. Serve rice with salted coconut cream and freshly chopped mango. Garnish with a mint sprig. 

Instant Pot Instructions

  1. Rinse the rice under cold water. Drain out any excess water.
  2. Add rice, water, and 1/4 tsp Himalayan pink salt to the insert of the Instant Pot. Cook on High pressure for 15 minutes. Let pressure naturally release for 7 minutes.
  3. Manually release any remaining pressure.
  4. Stir in syrup or honey until combined.
  5. While the rice is doing its natural release, simmer the cream and remaining salt together in a saucepan over medium heat until thickened, about 3 to 5 minutes. 

Serve rice with salted coconut cream and freshly chopped mango. Garnish with a mint sprig 🌿
